A food safety audit can and will improve your business

It is not currently mandatory to display your Food Hygiene Ratings on the front door of your food business in England, but is highly likely that it will become so sometime in 2018. It is now compulsory for all food businesses to display their Food Hygiene Rating Scheme ‘stars’ in Wales and Northern Ireland, and any customer in the UK can find your rating within two minutes, by visiting the Food Standards Agency website.

Cowan Catering Management can provide a full Food Safety Audit, covering the areas which an Environmental Health Officer will check when assessing a food business, before they issue a Food Hygiene Rating. Having an external food safety audit will be considered as a proactive approach, when ‘confidence in management’ is assessed by the local authorities.

A Food Safety Audit will usually take between one and one and a half hours, and will take place during operating hours to observe staff practices and procedures. Coaching will be given to the team at the time to address any immediate issues. In addition, the physical conditions and management & control procedures will be assessed, including Food Safety documentation, labelling and adherence to Food Safety Regulations.

When the check has been completed, there will be an on-site summary of the main findings, and afterward a full and detailed report with recommendations, emailed within 48 hours. An action plan can be added if required, and a hard copy of the report will be supplied within three days.

The report will be divided into the same criteria as used by an EHO during their visit. The EHO will want to know that the conditions exist within the business to produce safe food for the public, and we can help you create those conditions.

If equipment, chemicals, documentation or posters are wanted, these can usually be supplied at the time, or within two to three days.

We can assist with documentation, such as Safer Food Better Business, HACCP recording and Allergen documentation. We can supply full SFBB packs, HACCP documentation, allergen documentation, posters, signs and more.

We can assist or liaise with the local council if required, including requesting revisits, assisting with appeals or general administration.
